ABERLOUR: Charleston of Aberlour,
Banffshire. [The Centre]
Comment: pronounced “aber-lower”, the Aberlour-Glenlivet distillery
is built on the site of a kirk which was sanctified by the early Christian missionary,
the Pictish St. Dristan [St. Dunstan - later the Archbishop of Canterbury],
who used the Lour water popular in France - vive l’Auld Alliance.
Notes: est. 1826 [renovated 1879]; water - a Ben Rinnes spring. Best: after
eating.

AUCHROISK: Mulben, Banffshire
[The Centre]
Comment: Auchroisk [pronounced “othroysk”, and means “ford
across the red stream”] is a modern designer distillery [it gained a Saltire
Award for outstanding architectural achievement in a traditional Scottish style].
It uses mainly sherry casks.
Notes: est. 1974; water - soft, from Dorie’s Well, The Mulben Burn. Best:
after nouvelle cuisine.

[Isla]
Comment: Aultmore-Glenlivet’s name derives from the Gaelic “big
burn”, and this isolated distillery is situated in an area where to outwit
the “wretches, hired by those to whom excise is paid” [Dr. Johnson]
covered peat stacks with large white cloths as a warning when danger approached
the “sma’ stills”.
Notes: est. 1895; water - The Auchinderran Burn, peat from Foggie Moss. Best:
before eating/with seafood.

[Dufftown]
Comment: built next to Glenfiddich by the same owners, William Grant; though
now run by the 5th generation it still proudly retains all the proper, traditional
methods of production - growing its own barley, floor malting, employing coopers
for the casks and a coppersmith for the stills.
Notes: est. 1892; water - The Robbie Dhu or Dubh springs [pronounced “doo”].
Best: after Xmas Eve dinner.
